Yum. For the past two weeks, school and Nerve have been in control of my life. Stauffer library, sleep, class, sleep, etc., etc. So, today I woke up with an idea to switch things up. That idea was apple pie.

Well, to be more specific, that idea was apple pieS. I couldn’t decide on what style to make my mini tartlets. So I made ‘em all.

I didn’t use a recipe, but I think they turned out very well (I sampled a couple slices before giving them to friends). Presentation wise, I think my favourites are the pillow in the back (if I had used a fork to stamp the edges) and the little cups that I used a muffin tin to shape.

The biggest problem I had was trying to get the dough thin enough without it ripping. In some cases the pie crust was a bit too much for my liking; yes, it was flaky and delicious, but I love apples and THAT’s the flavour I wanted to come across. They’re not pie pies, they’re apple pies.

With the leftover apples I made somehow made a mug apple-pie cake. It was delicious. For those who don’t know, a mug cake is a cake you “bake” in the microwave. From start to finish these take about 5 minutes to make. They are my addiction (5-minute chocolate cake for 50 calories.. ummm yes please).

So, that’s it. I had a lovely morning, but now it’s back to work. I have a quiz in two hours. Happy autumn everyone!
